Coconut French Toast
Servings: 2 People
Ingredients
- 2 Eggs
- 3 Tbsp Coconut Flour
- ⅛ Tsp Nutmeg Powder
- 2 Slices Brioche
- 20 g Butter
- 2 Tbsp Desiccated Coconut
- 150 ml Lukewarm Water
- 5-10 Berries Optional
Instructions
- Dissolve the coconut flour in lukewarm water
- Whisk the eggs, coconut milk and the nutmeg powder together
- Dip the brioche slices into the mixture
- Let each side to soak for about 1 to 2 minutes
- The mixture should be completely absorbed by the brioche before toasting
- Now melt the butter in a frying pan on low flame
- Sprinkle the desiccated coconut on both sides of the soaked brioche slices
- Toast them for about 2 – 3 minutes on each side until golden brown and cooked well
- Garnish with berries of your choice.
